Banana blueberry milkshake

This is one healthy shake and easy way of giving kids their five-a-day with milk. This is my sons favorite way of having milkshake. I have given this recipe for 1 glass of milkshake you can djust /increase the ingredients as required.



Ingredients 

Blueberries
Banana
Honey 1 tablespoon
Milk - Just a little more than 1/2 glass



Recipe 

Take all the ingredients in a jar and blend them together. I have used my stick blender you may use your liquidizer/ liquid grinder.


Your healthy shake is ready to be served. This healthy shake is suitable for all the family and is ready very quickly. Tastes best when you use chilled milk and fruits.

Beetroot pulao - recipe using Rice Cooker

After the lengthy post of the patty and hot dog / burger bread which takes a lot of time to get done,, this is a really quick fix and filling recipe. This can be a great savior for you as had been for me time to time. This can be done after a long day at work or for the kids when they have their friends over for a play date.

You would need ingredients as below 

Basmati rice - 2 cups
Peas - 1/2 cup
Beetroot -1 Grated 
(You can also use beans etc)
Paneer - cut into small cubes 
Onion - 2 medium sized finely chopped
Spices - Bay leaves, Cumin seeds, while black peppercorn, cinnamon stick - 1 inch piece, cloves - 3/4
Oil/ Clarified butter/ ghee - 1 tablespoon



Recipe 

In a pan heat oil/ ghee and when its ready put all the spices in. The cumin seeds will start crackling.


Then add finely chopped onions to this 


and keep frying.


As the onions start to change colour and get translucent add vegetables and after a minute or two add cheese/ paneer cubes to this.


Now add grated beetroot


Mix well and cook for 1-2 minutes more. Now, switch off the flame.


Now take 5 and 1/2 cups of water to your rice cooker and add this vegetable spice mix and soaked rice. (Requirement of the water can differ according to the make of your rice cooker. As mine has instructions for 2.5 times the amount of rice)


Now when your rice - pulao is ready, it would look like this. Just the difference in color make it a bit more interesting also we all know the goodness beet has.

Burger bread / hotdog roll no egg

Long overdue post ... this one. I have been thinking of putting up this one for a long time, as all in family love this freshly made version of the burger bread rolls which are not difficult to make at all. They do take sometime as all recipes containing yeast as they need time to rise and proof as well but apart from those intervals these are pretty easy to do and healthier as well as they are made of wholemeal flour. Asian people can use wholemeal i.e normal Atta.


This recipe would give you about 8 rolls.

The ingredients you need are -

Wholemeal flour - 3 cups
Butter - 1 Tablespoon + some for brushing
Milk - 1/2 cup warm
Water - 1 1/2 cups
Yeast - 1 table spoonful (use dry active yeast)
Sugar - 1 tea spoon
Salt - 1/2 teaspoon 
Sesame seeds - 1 spoonful

(If you are vegan do not bother adding milk , use only warn water instead.)


Add yeast to the warm milk + water mix and keep aside for it to get frothy. This will take about 10 minutes as depends on the room temperature as well.



Meanwhile add 1 table spoonful butter to the wholemeal flour and mix well with fingertips. 

After its been mixed well properly this will look like this.


When ready the yeast mixture will look like this frothy on the top.


Now keep adding this liquid mixture to the wholemeal flour mix little by little. You have to make a very loose sticky dough like this (shown in the picture). If you find water too less please add some more water to get desired consistency.


Now cover this witha cling film and keep aside to rise at least double the size. This took about 2 hours for me.

After this has risen to double and you have to knead again really well as all the air bubbles need to go away.

and mixture wouldn't stick to the sides anymore rather would feel very smooth to roll.


Now we have to divide the mixture in equal parts. Cut it into two equal parts. Smaller portions are easier to handle.

I divided into two batched of four one in round shapes for burgers and another batch a little longer shape for hot dogs.

 Preheat the oven at 200 degrees and arrange the burgers/ hot dog dough in the baking trays




Cover them with cling film and keep in a warm place to rise again for 3.-45 minutes




After they rise they would look like this 



I baked them for 25 minutes and when they came out they looked like this


Now, This is the time when I brushed them with some butter.

 

Here is the ready platter of my home baked burger/ hot dog buns ready. 









Vegetarian / vegan Hotdog patty/ burger patty

This one is my most favorite recipe so far now and I have kept about 20 patties frozen to be used for the kids lunchboxes. This recipe makes about 28 hot dog size patties. It does take time but is full of protein, fiber and calcium and sooper yummy to taste.

You will need the following ingredients for the patties and oil to fry. I would recommend sunflower oil as it doesn't have any strong smell to it.

Potatoes - 2
Bread crumbs - (I used homemade of 2 wholemeal breads)
Chick peas - 1 can
Red kidney beans - 1 can
Paneer (cottage cheese) - 1 cup full (if you are vegan use tofu - tastes brilliant and easier to use)
Beetroot - 1 grated
Soya chunks - 1 + 1/2 cups
cornflour - 2 tablespoons (not shown in the picture)
salt - to taste
Pepper - to taste
Peprika - 1 spoon





Preparation 
 Boil 2 medium-big potatoes. Then peel and mash them.
Grate the beetroot and keep aside.
Take soya chunks in a grinder and grind into dry fin powdered form.
If you don't have canned boiled hickpeas and red kidney beans you an soak these overnight and boil them. Afterwards mash them and keep aside 

Recipe

Mix all the ingredients together and mix well. Add salt, paprika and pepper. At this stage you may want to use more spices but trust me as such these taste heavenly. Add cornflour to bind them together well as we don't want them to break while frying.



The ready mixture will look something like this.


Give the desired shape. I have made them into long ones you may want to make round.


Heat oil in a pan on medium flame. very low flame may make your patties absorb more oil than required and very high will make them under cooked from inside.


Keep turning them at regular intervals as you don't want them to get burnt or not properly cooked. 



When they are ready they would look like this. 



You can also have them for snacking or they are ready to be used for filling up a burger or a hot dog. Do let me know how did you like the taste and also take the feedback of your children and let me know.
